Whole30, Paleo Tailgating with Coleman

by Susan

Sponsored Post: This post is sponsored by Coleman but the content and opinions expressed here are all my own. #TailgateWithColeman

Summer is winding down. My heart just shed a tear. Like a huge, crocodile tear. (Guys, I live 30 minutes from the beach and I didn’t make it to the ocean ONE.SINGLE.TIME this summer. Life is so different these days.)

Coleman Kabobs 6

That being said, fall is my season. Our season. I love summer but fall is for camping, grilling and being outside. This is even more true now that I am living the life as special-needs-mom (every time I type it or say it, it still makes me step back and go ‘whoa’). Lorelei’s mitochondrial disease makes it a bit tougher for us to fly by the seat of our pants. Everything takes planning. And then canceling of those plans. Then being open minded about the whatever happens-happens kind of plans.

I cannot wait for Fall. I used to love it - but now I long for it. The season when the temps crisp and cool and my child can go outside! We don’t have to worry about the heat. We have one less component to plan (or worry about). We can feel a tad bit more normal… until it gets too cold. But that’s another story.

Today I am sharing my go-to fall, grilling, tailgating, festive, whole30, paleo recipe. You can’t beat Kabobs these days (unless you realllly need to keep things simple in which case just grab some whole30 compliant, paleo spicy chicken sausage from Trader Joes and call it a day!) We are “tailgating” and kicking off the season with our essentials from Coleman (and our new camper)! Gotta love an excuse to set up your camper and gear in the backyard right?!

You can shop the entire Coleman collection at Walmart.com (or in-store) here!

I purchased my Coleman Roadtrip LXE grill online at Walmart.com. Walmart makes shipping easy for those of use who don’t get out much - or pick up even easier for those who need an excuse to get out!

Coleman Kabobs 1

Whole30 Kabobs on the grill are easy to pack ahead of time (if you’re traveling or tailgating away from home) and allows you to be creative. Grab the bites you like best (chicken, beef, veggies or even fruit!) stick them on a skewer, pop them in your Coleman cooler and go. When you get to your tailgating site or your campground, use your Coleman grill (or the open fire) and cook up your dinner!

Great for tailgating or backyard grilling!
Author: Susan {2 cats & chloe.}
Ingredients
  • Protein of choice (we use chicken, steak or shrimp)
  • Veggies of choice (peppers and onions are a must, but consider mushrooms and zucchini too!)
  • Fruit of choice (loveeee me some pineapple and tomatoes!)
  • Marinade of choice (Tessamae's BBQ or a simple coconut aminos, garlic, salt and pepper combo)
Instructions
  1. Soak wooden skewers in water for a couple of hours before grilling so they do not catch on fire.
  2. Cut up your proteins, veggies and fruit into smaller, bite-sized pieces and put in individual piles or bowls.
  3. Let your family members 'build their own' skewers with their favorite paleo 'toppings'!
  4. Grill on medium heat until meat is cooked to desire doneness.
  5. Enjoy!

Life Hack for local folks: Harris Teeter (one of our local grocery store) sells kabobs pre-made and decently priced. They make life so much easier when you need a quick dinner full of veggies and protein but you don’t really feel like cooking. (Or when you’re on your way to tailgate or camp!) Yes, they have some with a marinade - which truth be told, I haven’t checked to see if it’s compliant, but I assume it’s not. So buy them “naked” and add your own seasonings and marinades. (Please try ordering “Naked Kabobs” from your butcher and tell me what happens! LOL!)

Pair these whole30, paleo kabobs with my tomato and cucumber side dish, and a salad mason couple of mason jars and you’re good to go! (Wine for those who are NOT on a whole30…) Happy camping y’all!

Second Trimester: I’m ready to #FeelGooder

by Susan

This post was sponsored by ZonePerfect - but the thoughts, pictures and love for chocolate treats are all my own!

Y’all, pregnancy is tough. I always thought that I wanted two or three kids, but the thought of having to do this all over again makes me physically ill. And I can say that because I am pretty much nauseous all the time. I was told “Oh, at 12 weeks you will feel better!” Then it was “14 weeks is the magic week - you will definitely feel better this week!”

Hellooooo week 15. Shouldn’t this morning sickness, which I am beginning to know as “mourning sickness” - shouldn’t it be letting off soon?! Yes, I guess, technically, it has gotten a bit better. I have gone from force feeding myself every hour and a half, to now, a full three hours! It may not sound like much to you but THAT’S A REALLY BIG DEAL! (If I go one minute past three hours though - look out world.)

So with such a strict, must-eat-or-else deadline, I have had to seek out something quick, easy, healthy and delicious to carry with me at all times. Please allow me to introduce the ZonePerfect Perfectly Simple nutrition bars. Before I proceed, let me stress that these are not paleo and they are not Whole30 compliant. But they are delicious! (Unfortunately paleo foods, while I am 100% craving and wanting them, baby is not. So I have had to seek alternative, healthy options like these bars!)

2 cats & chloe: Zone Perfect Perfectly Simple Nutrition Bars - Gluten Free

Not only are they gluten free, but these healthy treats are loaded with protein and are only 200 calories. While they have a handful of flavors, the two I am most obsessed with are the Almond Toffee Crunch and the Oatmeal Chocolate Chunk. (The other two flavors you can try are Bing Cherry & Almond and Roasted Cashew & Dark Chocolate.)

As I was snapping these pictures, my mom came in and wanted to try both flavors. She tried one bite of the Almond Toffee Crunch and quickly proclaimed “THESE ARE GLUTEN FREE?? These are soooo good!”

Wanna try these for yourself? ZonePerfect is offering my 2 cats & chloe readers a coupon so that they can try these delicious treats and and #FeelGooder too!

Which flavor Perfectly Simple bar do you want to try? What can you recommend to me to me to help with the “mourning sickness?”

Hello Fall: Fire Pit, Cider and Award Winning Chicken Chili

by Susan

*Today’s post is sponsored by Stanley Brand, but my love for fall, chili, cider and festive celebration essentials is all my own!*

You know what I love about this time of year… other than pumpkin spice everything?! I love the cooling temps, festive fire pits, cozy blankets, chili in the crock, hot cider (spiked, unless your pregnant!) and quality time with friends and family… outdoors!

I was thrilled when Stanley wanted to collaborate with 2 cats & chloe again! As a camper and someone who loves food and entertaining - I was excited to have an excuse to light up the fire pit, make my award winning chili and sip some fall spiced cider with my family. Tis the season, right?!

2 cats & chloe: Chicken Chili by the fire 2 cats & chloe: Stanley Growler

In the end, since everyone’s schedules seem to be so crazy these days, it was only my momma and I enjoying this hangout sesh. We went on what felt like a snipe hunt through the yard, looking for dry branches. (Post-hurricane, fire pits: while sticks are easy to find, wet ones aren’t easy to light!) But two girl scouts are never going to settle for a lame fire! By the end of our meal, as our tumblers were out of cider… the fire began to roar. And it was just plain lovely.

2 cats & chloe: Chili and campfire with mom and stanley 2 cats & chloe: Chloe and cider Drink up with Stanley Tumblers

For those of you who are still hoping to see a baby bump… you will have to hold out just a bit longer. I feel like I am just getting wider and wigglier. Not pregnancy-cuter by any means! (PS. Is pregnancy updates something you would want to see around here? I do not intend on going legit mommy-blogger on ya, but I also want to stay true to the lifestyle thing and actually document my life…)

2 cats & chloe: Fall festivities, cider, stanley

Anyway, it was a great evening spent with my mom and my pets. We turned off our phones, enjoyed a meal, sipped some cider and just watched the fire. Guys, does it get any better than this for a Monday night?!

2 cats & chloe: Cheers and Cider!2 cats & chloe: Fall Fire Selfie

Now before you freak out and say “She has an award winning chili and she hasn’t share it with us?!” let me preface this with - it’s not paleo and it’s definitely not Whole30 compliant. That being said, proceed with caution. This Chicken Chili will easily become your new favorite thing! (Fine print: I have won three chili cook off awards with this recipe so if you’re going to enter it into a chili cook off - and I run into you there - you better pack up your crock and let me take home the gold. Does that sound fair?!)

I personally like mine extra cheesy so I add more cheese and sometimes less broth. If you like it soupier, add more broth (because after marrying all day… it tastes legit!)

A little shout out to the AWESOME Stanley Gear that helped make this evening even more memorable… I speak from experience when I say that Stanley products are built for life. Whether it’s surviving another outdoor adventure or serving as a reliable must-have for tailgating season – Stanley provides top quality outdoor gear. AND you can pop these suckers all in the dishwasher too! #DontMindIfIDo!

Stanley sent me the Adventure Vacuum Crock, the Classic Vacuum Growler, and the Adventure Stacking Steel Tumblers. After playing with and using all of these products, I have to say that while the Crock is off the hook amazing and perfect for tailgating, I am obsessed with the Vacuum Growler and the Tumblers. Our cider stayed hot for hours and the tumblers, with their colorful koozies were the perfect touch!

2 cats & chloe: Fall fire pit

So there ya have it guys and gals! How did you spend your Monday evening? I highly recommend you pencil this in for next Monday… If you ask me, Award Winning Chicken Chili, Cider, Stanley, a Firepit and family may just be the perfect way to start a week.

SWS - What is your go-to Spring Nail Polish?

by Susan

I love love love all of the colors that come when the seasons transition from winter to spring. The fun pastels and then the bright pops of color that lead us into the summer… As I type this I am sitting in the passenger seat of my mom’s SUV, driving west through Virginia. I know I am a bit biased but I really do live in one of the prettiest states! Everything blooming and the grass is all green again! Helloooo spring in Virginia!

Anyway - back to the point! Today is Say What Saturday! It is the one day out of the week when I ask the 2 cats sponsors a fun, simple question. (IMO, it’s a great sponsor perk and creative way to let my readers get to know you and your blog a bit more!) Since spring is all around us, today I asked my sponsors about their favorite spring nail color. Because let’s be real… life is always a little more fun when you have colorful finger nails!

2 cats & chloe: Spring Nail Polish // Say What Saturday // blogger opportunity // what is your go-to nail color

Meet My Sponsors: Dagmara from Glamista Home, Jenn from What You Make It, J from A Hot Southern Mess.

Now I’m not sure about the other’s but I know J is spot on with this nail kit. I have one as well and while it may take a couple minutes longer to do the gel nails, I love that they are a bit more durable. Then again, I still appreciate and love a quick coat this mint polish when I’m sitting at my desk on a conference call. Shhh don’t tell my clients how I multi-task! #winkface

It is your turn now! What is your go-to spring nail polish? Do you have a particular brand you love? I am always looking for recommendations when it comes to beauty products!

Y’all have a happy weekend! Like I said, I’m adventuring across the state on a mini vacation with my mom! I’m so excited about the purpose of this trip (which will stay hush hush until next week…) but it involves me fulfilling one of my life long dreams. Am I vague-blogging enough for you yet?

SWS: Will you be doing an easter egg hunt?

by Susan

So let me preface this Say What Saturday by telling you that my family is cut-throat when it comes to easter egg hunts. There is pushing. There is shoving. There is name calling. But it’s all in the good spirit of Easter and finding that one “Golden Egg.”

You see, my mom is an absolute Rockstar every day of the year, but especially on Easter Day. Not only does she spend the day making a delicious meal that works with all of our eating issues (I’m paleo, gluten-free, sugar-free and mostly dairy-free. My dad doesn’t eat red meat. My sister is a vegetarian… You get the picture right? Holiday meals are a smorgasbord in our home!) So she does all the meal prep, and then my mom spends at least an hour wandering around the yard before we all arrive hiding plastic eggs. 90% of them are either filled with spare coins or (melted, depending on the weather) m&ms. The remaining 10% have cash-money in them. Most of the eggs-with-bills only have a dollar or so in them. BUT there is always one with a $10 bill and one with a $20 bill. You better believe it is hard to find the Golden Egg with the $20. A few years ago my roommate and I spotted it at the same exact time… There was pushing and possibly a skinned knee over it.

So today, I wanted to know what everyone else does when it comes to Easter Egg Hunts, so I asked my sponsors. Does your family do them? Is it just for kids? Is there name calling involved?

2 cats & chloe: peeps for easter

Now y’all, I need to go run some laps, practice my tactical moves and read through a few “Where’s Waldo” books to prepare for tomorrow… Mama’s gotta find that Golden Egg to support the blog!

Jokes aside, remember the reason for this holiday. He is Risen! He is Risen indeed! Have a blessed Easter!
