CELEBRATE SOUTHERN: Paleo Pumpkin Spice Latte

I am well aware that some parts of the country are basically entering winter at this point. I am also well aware that most of us have had our fair share of Pumpkin-Spice-Everything this late into the season. But what’s the harm in a little bit more?

Since last week I have been rocking out to the new T.Swift album pretty consistently. Every time I hear this song I begin craving Starbucks. Why?! Because she has a line in the chorus that sounds like “Gotta love the Starbucks lovers…” At least that’s what I hear. {The actual lyric is “Got a long list of ex-lovers…”} Because of this subliminal messaging, I have yet to allow myself to pull into the Starbucks parking lot. I’m pretty positive there will be a ton of Taylor Swift fans constantly craving Starbucks Coffee for the next few weeks with no clue why… {Am I the only one who hears “Starbucks lovers” in this song? Maybe I need to start listening to Veggie Tales and start subliminally craving vegetables more often?}

Anyway - I’ve fought the urge to visit Starbucks and I’ve created my own healthy, clean, paleo take on the #PSL {that stands for pumpkin spice latte, mother.} Notice I said clean… because from what I’ve read online there is nothing clean nor healthy {never mind low fat} in the Starbucks Pumpkin Spice Latte.

100% Pumpkin Puree Spice Latte Paleo Pumpkin Spice Latte Ingredients

Recipe type: Beverage
Serves: 1 mug
Ingredients
  • 3 TBSP of 100% Pumpkin Puree
  • 2 TBSP of Heavy Coconut Cream
  • 1 TSP of Pumpkin Pie Seasoning
  • 5 drops of Liquid Stevia
  • 1 cup of coffee
Instructions
  1. In a skillet on Medium heat, blend your Pumpkin Puree, Coconut Cream, Pumpkin Pie Seasoning, and Stevia.
  2. Allow it to melt together, whisk/blend until it looks like a creamy, orange sauce.
  3. Brew your cup of coffee, leaving space for your "pumpkin cream."
  4. Pour the "Pumpkin Cream" into your cup of freshly brewed coffee. Stir together. Enjoy!
  5. {Feel free to adapt the amount of ingredients to your taste... Want it really sweet? Add more stevia! Not a huge fan of Pumpkin Puree? Cut it in half! This is a cup of coffee... so make it to your taste!}

Homemade Pumpkin Spice Latte

The best part about this is that it is a cup of coffee… if you want it to be sweeter, add more stevia! Not a huge fan of pumpkin? {Well then you are probably reading the wrong recipe… may I recommend this one?} You can cut or double any of these ingredients to suit your taste buds.

Wondering where I find certain ingredients or why I am using weird things like heavy coconut cream? {Because it’s awesome, that’s why!} This has become my go-to coffee creamer replacement. I made my mom a cup of regular coffee with this heavy coconut cream and she said it was the best coffee she has ever had. Give it a shot! {FYI - it is only a couple of dollars in the store, and it goes a long way, depending on how you like your coffee.}

Fun ingredients you need to try in your coffee because they are clean and healthy:

Heavy Coconut Cream {cheaper in stores} // Liquid Stevia {cheaper in stores} // Pure Pumpkin Puree // Pumpkin Pie Spice {cheaper in stores} // Dark Magic Coffee

Want a really big hint at how to make your life so much easier but still have a warm coffee pumpkin beverage? While I love the fancy creaminess of this latte, THIS is what I do most mornings: Put a little Pumpkin Pie Spice in the bottom of your coffee mug. Brew your coffee like you normally do, add a bit of your regular sweetener and cream, then stir it until the spices blend in… it’s amazing and so oh so easy! You’re welcome.

Friday Dance Party: T.Swift vs The M.Train.

Pour the Champs!  It’s Friday Y’all!  
  
Unfortunately I didn’t make it through the week in one piece… I have strained the muscles in my right bicep, as well as the tendons surrounding my elbow.  Basically my arm won’t go beyond a 90 degree angle… So while typing is actually possible, it’s not comfortable.  I could sit here and ramble but I’m all hyped up on pain pills and muscle relaxers so, after the week I’ve had, Lord only knows what nonsense I would be publishing.  
 
Given my current situation, and since it is a beautiful Fall Friday - why don’t we just have ourselves a little dance party instead of spending our spare minutes reading my blog?  
 
I’m currently crushing over these two favorite songs and for the life of me, I cannot pick which one is “more favorite!”  Turn your speakers up, get your dancing pants on {unless you prefer to dance with no pants… in which case you are on your own!} and let’s get to it!

Glitter and Cracks: Weekend Recap

Is today Monday?  Ever since I moved to my new house I have given up the power of sleeping well.  I sleep, until I dream of zombies or until Chloe hears a noise and we all jump off the bed and do a freak out dance.  Yep… pretty positive it’s Monday… which means it’s a-ok in blogland to do a weekend recap right?

Here we go!

Friday night we found ourselves a little over involved with the glitter.  I am just now realizing that my wedding is not nearly as far away as it appears on the calendar.  As I age, my knees ache a bit more and I begin to move a bit slower… but time seems to triple its speed every year.  Even though my wedding appears to be months away, now that I have turned 29, I am practically only 17 minutes and thirty-two seconds from walking down that aisle.  So I better get working on all the little details I have in mind.  Good thing I had Chloe’s help… {And how incredibly terrific are these clothes pins?  A tutorial on their awesome-ness will be available soon!}

Saturday started off early.  I am bartering a month-of wedding planning package for yard work.  I had the groom (soon to be cousin-in-law) and a couple others drive up from North Carolina to turn my jungle into a backyard.  What do you think?

I love the fact that I don’t feel like I’m in the movie Honey, We Shrunk the Kids when I step into the backyard now.  Huge plus.  
Saturday night I was lucky enough to get another Birthday Present!  One of my dear JMU friends, Caitlyn, bought me a ticket to see the Avett Brothers!  We met for dinner, where I enjoyed a Dark & Stormy (one of my all time faves when made with Goslings) and then headed to the show.

Unfortunately, the walk to the venue was simply tragic.  Imagine the one person (or thing) that is always there for you… She wakes up next to you and goes to bed next to you.  She helps you when you’re lost.  She helps you stay current with your chores (such as maintaining your farm).  She tells the world your secrets, only when you want her to.  
Imagine such a friend.
Then shatter her into a million pieces.  
That is what happened to my iPhone.  On the concrete.  In a gross parking garage.  Where I saw someone peeing next to my car later that evening.  
The photo really does not do the phone cracks justice.  She still works, but she is in “spiderweb mode” now.  My sister had to use my phone today and actually said “I’ve seen cracks before - but never like this!”  (Assuming she was talking about my phone and not my new shorts…)
But the show must go on!  And so it did!  We danced, we jammed, we hopped and sang… we had a good ole time and as we drowned our iPhone-less sorrows in live music.

I suppose the weekend is not complete without Sunday!
My Sunday was relaxing.  I slept in, as much as I possibly could considering my body passionately dislikes sleep.  Then I chatted a bit with Michael who is still stationed in Japan.  I realized that my Bridal Shower is coming up and that our wedding registry needed a little work so I spent some quality time in Target.  (Never a problem.)
I wrapped up the evening at one of my new friends’ home.  We sat on her back deck, drank wine, ate the most scrumptious store bought, frozen pizza I have ever eaten, and watched the birds.  (The ones in her backyard… not the movie.)  It was quite a great way to end a great weekend… cracked iPhone and all.

Life is Beautiful

I absolutely ADORE finding new music and terrific songs.  This morning I was surfing around youtube… you know, where you start with one song or video, and then you click the link to one of the suggestions on the right, and then you click another, and another, and… you get my point.

After a few simple clicks I found a song that I love.  I have played it practically 5 times already.  The tune is great but the words are terrific.  Since I seem to love it so much, and since you and I always seem to have a oh so much in common I knew I had to share it with you today!

P52 Week 2 - Made with Love

Week Two!  Of p52!  Woo!  I made it to week two!  Although, I will be honest, I haven’t had a chance to take any photos outside of those for my blog.  I pondered the photos I have taken this week though and decided I would recycle a picture! AAH!!  That’s not a rule breaker is it?  It’s not an old photo.  And I did take it this week.  It’s just one I used yesterday! :)

The theme of the week is “Made with Love.”  If you read my post from yesterday you heard the details of these envelopes and letters, some at the ripe old age of 22 years,  from my cousin in Switzerland.  If this doesn’t capture the theme, I don’t know what will.  They revolve around stories of our Prince Charmings, missing each other so badly our hearts ache, adventures we would conquer and trips we would take, and of course the love we have for each other.  Finding these letters has been the highlight of the first 5 day work week of the year. The love and joy they reminded me of… priceless.

Also - I am currently in love with this song, and video.  Watch it, and love it.  It has been playing nonstop for a day or so now in my house. :)
