So I’m really not so sure if this is a seasonally accurate post or not… My plan was to play around with this concept prior to Valentine’s Day, snap some pictures, share it on the blog and all that jazz. However, life happened and I didn’t have time to play with coconut cream until it was actually Valentine’s Day. (FYI - I took all weekend off and did absolutely nothing except watching a few seasons of House on Netflix… It was wonderful.)
Like I was saying though - now that Valentine’s Day has come and gone - unless you are on a Whole30 or you’re simply trying to cut sugar, I don’t see this recipe being all that handy until summer hits and fruit is running rampant all over the south. It’s just so amazing and incredibly easy. It needed to be shared immediately.

In case you’re new here, let me catch you up. I’m obsessed with the Whole30 and clean, paleo eating. I am currently on day 47 of a Whole60… no processed sugar, no booze, no grains or rice, no legumes and no dairy. And honestly, per the rules, no dessert, even if the ingredients fit all the rules. (Come back tomorrow to see my day 45 check-in!) So on Valentine’s Day, when my husband made me dinner and I made “dessert” I was kinda breaking the Whole30 mindset rules… except our dessert was complaint ingredients: fruit and coconut cream. (The Whole30 folks call it S.W.Y.P.O. Google it.)
So while this breaks no food rules of the whole30 - if you’re going BY THE BOOK (WHICH YOU SHOULD BE unless it’s Valentine’s Day and you’ve already done 45 days of the Whole30) technically you cannot eat it as dessert. So eat it as part of your lunch! I’m not a big fruit eater, but with this amazing cream on top of it, you better believe it will be on my menu a bit more frequently.
- 1 Can of Heavy Coconut Cream
- OPTIONAL: Liquid Stevia
- OPTIONAL: Vanilla
- Put a can of heavy coconut cream in the fridge overnight.
- Once cold, open can and drain any liquid.
- Put coconut cream in bowl and whip it with a hand blender or mixer. (My hand blender worked perfectly in just a couple minutes!) It may take a few of minutes, but trust me, it will whip up light and fluffy!
- If you want to add options to this whipped coconut cream, do it now... I don't add anything to mine and think it's great. But if you want to make it sweeter you can add a few drops of liquid stevia and a couple drops of vanilla.
- Use immediately. Put any leftovers in the fridge and use later. (You may have to whip it up again though.)
Since it was Valentine’s Day (and because I’m a blogger) I decided to make my Paleo Whipped Coconut Cream “pretty” with the good old ziplock baggie. (Cut the corner off and squeeze it out!)
In the midst of “making it pretty” though, my husband got tired of me snapping pictures of food so I just dolloped it on the middle of my fruit plate!
Give it a shot! This is a WONDERFUL replacement to cool-whip or any other cream packed with crap. And it’s just so darn easy. I love it when clean eating is easy. It gives my friends less ammo when they criticize my eating choices. Oh, and the leftovers also make the most delicious coffee creamer the next day. You’re Welcome!
I’d love to hear what you think!

I have a huge sweet tooth and i’m half heartedly doing a whole 30 so thank you so much for this recipe 🙂

Ok - you need to stop the half heartedly thing! 🙂 (This is my tough love!) I did my first whole30 half heartedly and got very little out of it… once you get past your move and all the craziness you should try to do it for real, for 30 days! You can do it!! 🙂
Yum. Does it taste like coconut? I have a thing with coconut but it may be the texture. I would definitely be willing to try and fall in love with this thought.
Susan @ 2catsandchloe says
It honestly doesn’t scream coconut. Personally I have never been a big fan of coconut flavor, yet now, I cook with coconut oil, use coconut butter, and have coconut cream or milk in almost everything. This is so delicious. I don’t think I will need “cool-whip” ever again.
OH, this looks like something I would eat spoon full. Sounds delicious!
Susan @ 2catsandchloe says
Oh I did… sooooo good.
Oh that looks yummy! I will definitely be trying this! Thanks for the recipe!

Honestly, this one doesn’t taste too much like coconut to me. It’s sweet but doesn’t scream coconut.

It’s SO GOOD! I think it’s even the best coffee creamer ever… Mmmmm
Oh my goodness, that fruit plate with the whipped cream sounds so good, whether you are following a specific diet or not!
Susan @ 2catsandchloe says
Doesn’t it though?! It’s become my dessert of choice! 🙂
this is super easy… I do the same by just adding the coconut milk in to a mason jar, adding stevia and shaking it.. it is so good! Thanks for sharing ;o)
Susan @ 2catsandchloe says
Mmmmm I haven’t thought about that! I am a few days away from wrapping up my Whole60 so I will have to give this a shot! Thanks for stopping by! 🙂
If only I was a fan of coconut and whipped cream! It looks good though!
