Paleo, Sugar Free, Dairy Free Ice Cream

I’m such a sucker for ice cream. I’m also a sucker for Rita’s Italian Ice. Have you had their gelati before?? Oh.Em.Gee that custard with italian ice combo is absolutely legit. Even as someone who has given up sugar and tries to eat real, clean foods - I crave and want cool summer treats too! Which is why I created my own…

Because that’s just how I roll.

2 cats & chloe: Whole30 SWYPO ice cream

How pretty is this Homemade Paleo Ice Cream?? This was the easiest treat I’ve ever made. As a cross between italian ice and traditional ice cream, it really hit the spot since we’ve been having 90+ degree days lately.

Ingredients
  • 1 cup frozen strawberries
  • ¼ cup frozen pineapple chunks
  • ½ can of cold heavy coconut cream (I put my can in the fridge the night before)
  • Unsweetened coconut flakes
Instructions
  1. Put all of your ingredients except for the coconut flakes into your blender.
  2. Blend them all together until it is creamy and there are no large chunks. You may have to add a little bit of water if the mix is not at all creamy.
  3. Pour creamy fruit blend into one large bowl, or several smaller bowls.
  4. Refreeze for an hour or two. (Or enjoy it now as a 'soft serve' treat!)
  5. Remove from freeze and sprinkle coconut flakes and/or whipped coconut cream on top.
  6. Enjoy!

2 cats & chloe: Strawberry, Pineapple Coconut  Ice Cream

If you have kids, and you’re trying to watch the amount of sugar or food dye they are taking in… this is a great option. The coconut cream made the fruit so creamy it felt like I was eating legit ice cream or sherbet. At some point this summer, instead of refreezing it in a bowl, I think I will opt for popsicle molds!

For this batch I only used strawberries, pineapple and coconut cream, however, I bet a dash of vanilla and even some cinnamon would’ve made this paleo dessert even more decadent. If I make this for my husband, I may also add a little bit of honey to help over sweeten it. (Personally, I didn’t think it needed it, but you could always taste test it prior to refreezing! I mean, it is dessert… the sweeter the better?!) And don’t forget that you can top your bowl of healthy ice cream off with a dollop of whipped coconut cream too!

My plan was to refreeze this in small, individual serving bowls to share with friends, but then I realized I have packed all of my unique dishes. Unfortunately, I had to eat this entire bowl of healthy ice cream all by myself. #shoot.

Before the Whole30 Police jump all over this, let me add the fine print. While I usually only share Whole30 compliant recipes, and while this one only has Whole30 compliant ingredients… this is not Whole30 compliant ice cream. This is #SWYPO and is not allowed during your whole30. Rules are rules. Sorry y’all.

This paleo coconut cream ice cream is gluten free, sugar free, soy free and dairy free.
